FAT TUESDAY CAKE (SEMLA-HEALTHIER VERSION)

This could potentially be the healthiest cake you've ever had! The best part? It tastes sooo good!
This version of the traditional Swedish feast for Shrove Tuesday called "Semla" is a creation made in heaven. Think almonds, cardamom and heavy cream - and if you've never tried it you're in for a treat!
I try to prioritize health without compromizing on pleasure whenever I can, even over holidays. So when I tell you this cake is amazing I'm not exaggerating. Apart from tasting good, it's also packed with nutritious ingredients that are good for your hormones and body, sweetened with dates that are packed with nutritional value. It's also a better option than protein bars, as this includes almonds and eggs that add a good amount.

Ingredients:
12 medium pitted dates (I used Safawi dates but you can use others, if Medjool you can reduce the amount as they are bigger (allowing for lower blood spikes))
4 dl almond flour
6 eggs
150g butter
2 tsk baking powder
2 tsk vanilla paste
3 tsk cardamom
0,25 tsk salt
optional: scoop of collagen
Topping:
heavy cream
optional: shredded almonds
Set the oven to 175°c
Melt the butter
Add the pitted dates to the butter to soften
Mix the dates and butter with a handmixer or just mash them with your hands
Combine all ingredients in a bowl
Butter a regular size pan (mine is about 26cm) and add the batter
Bake for about 15 min, until the ends are done and the center is gooey
Let it cool completely and place it in the fridge
Serve with whipped cream and enjoy! (you can add shredded almonds if you like to be fancy, but I find it's enough almonds inside)
